Tofu Stir-fry

Healthy, light and quick - just what you need when you're pressed for time.

Ingredients

  • 1 tsp olive oil
  • 150g firm tofu, cubed
  • 50g brown rice
  • 160g (half bag) stir fry veg
  • 1 tbsp reduced salt soya sauce
  • 1 clove garlic, crushed
  • 1 thumbnail of ginger, chopped

Method

  1. Cook rice as per packet instructions

  2. Heat the oil and stir-fry the tofu for 1-2 minutes per side. Add in the soya sauce, garlic and ginger and stir fry for another 2 minutes.

  3. Add the veg and continue to heat for another 3-4 minutes.

  4. Serve with the rice
