TwoPlace a non-stick frying pan on to a medium heat. Add the sesame seed oil, garlic, ginger, chilli and red onion and gently fry for 3-4 minutes.
Then add the pork, peppers and carrots. Break down the pork with a wooden spoon and then place a lid on the pan and leave the vegetables to sweat for 5-10 minutes until soft.
Now add the honey, fish sauce, soy sauce and lime juice and mix well. Cook for a further 2-3 minutes until the mince is cooked through, the vegetables are soft and the sauce has reduced.
Wash the lettuce and chop off the ends and separate out the leaves into 4 cups.
Finally stir the peanuts, mint and coriander into the pork mixture. Fill each lettuce leaf with a spoon of mince and sprinkle with spring onions.
